Oats recipe by Vishpala

Oats recipe
1. Mushroom masala oats -
Shallow fry/ grill mushrooms for 1 min so they lose water. Then add lot of onion in cumin seed and coriander seed seasoning. After onion turns golden brown add little tomato (1/4 of onion approx). Then add mushroom and cook them well. Add red chili powder, garam masala and salt to taste. After that add oats, spring onion and water and cook for 3 mins on medium heat. Don't overcook.
My proportion - 6-8 button mushroom, 1/4 cup oats, 1/2 cup water, 1/2 cup onion

2. Green oats
Grind curd, salt, fresh coriander leaves, green chilies, ginger, garlic, basil together till coriander leaves are finally ground. Boil green peas till they are cooked properly.
Add olive oil to pan. Don't heat much. Add funnel seeds and add the above curd, boiled green peas and oats. Add water and cook for 3 mins on medium heat. Don't overcook.
My proportion - 1/4 cup oats, 1/2 cup curd, 1/4 cup green peas. Water as required.

3. Masala oats
Heat oil in pan. Add bay leaf, garlic, ginger, onion, tomato, garam masala, fresh coconut, whole red chili. Sauté till onion becomes golden brown. Grind above to super fine texture. Use water while grinding.
Boil any pulses of your choice - sprouted moong/ matki/ black Chana etc so that it's cooked properly.
Add oil to pan. Sauté masala till it becomes completely dry. Add boiled pulses. Now add water and oats and cook for 3 mins on medium heat. Don't overcook.
My proportion - 1/4 cup oats, 1/2 cup onion, 1/4 cup pulses. Water as required.

4. Thai style oats
Cook plain oats in coconut milk and basil leaves.
Add olive oil to pan and don't heat much. Add onion, ginger, very little garlic, capsicum, corn, beans and sprint onions to pan. Add red chili powder, salt and black pepper. Sauté till they become crisp. Then add cooked oats, keep heat on only for 1 min.
My proportion - 1/4 cup oats, 3/4 cup coconut milk. Or 1/2 cup coconut milk and 1/4 cup water.
